Today in Australia, we’re celebrating the 230th Australia Day. A national holiday celebrating the arrival of its first fleet of British ships at Port Jackson, N.S.W. in 1788. In short, it’s a public holiday giving a reason for us Aussies to get drunk and take our long weekend for granted. But before we get down to business, how do we start the day? Waffles of course.
As it is Australia Day, I made Lamington waffles. Not only is it gluten-free, it also uses somewhat healthier products than your ordinary waffles. So try this alternative, if you like your waffles but don’t want to skimp on the taste. Below is the recipe, follow at your own risk.
